Tomato Chat

The yummy chat from the foodie city of Banaras. Chef ajay in his heart-warming way shows you the famous tomato chat of Banaras which would definitely make your mouth water. Try it out and enjoy the snack.

For potato cutlets:
  • 2-3 nos boiled potatoes
  • 1 pinch corn flour
  • 1 pinch salt
  • 2 tbsp ghee
For tomato chutney:
  • 2-3 nos tomatoes
  • 2 tsp ghee
  • handful cumin
  • 1 tsp asafoetida
  • 1 tsp chopped ginger
  • 1 tsp chopped green chilli
  • 1 tsp garlic
  • 1 tsp turmeric
  • 1 tsp coriander powder
  • 1 tsp red chilli powder
  • 1 tsp salt
  • 2-3 tsp tomato puree
  • 1/2 tsp cumin powder
  • 1/2 tsp garam masala
  • handful chopped coriander leaves
  • handful chopped mint leaves
For plating:
  • 1 bowl curd
  • 1 bowl red chutney
  • 1 bowl green chutney
  • 1 pinch coriander powder
  • 1 pinch red chilli powder
  • salt to taste
  • 1-2 long chopped green chillies
  • handful long chopped ginger
  • 2-3 mint leaves
Method:
  • Grate boiled potatoes. Add a pinch of corn flour and salt to the grated potatoes and mix it up with light hands. Make this into small flat cutlets having any shape and cook them in 2 tbsp ghee. Turn it to a nice golden brown and then turn and cook it crisp from the other side too. Roughly dice tomatoes. Take some more ghee in a fresh pan and add handful of cumin and 1 tsp asafoetida for tempering. Add 1 tsp chopped ginger, 1 tsp chopped green chilli and 1 tsp chopped garlic to it. Cook them nicely.
  • Now add 1 tsp turmeric, 1 tsp coriander powder, 1 tsp red chilli powder, 1 tsp salt and mix it up. And now add the tomatoes with a little more ghee on the top. Stir it together. Now add 2-3 tsp of tomato puree to it and stir it well. Now add 1/2 tsp cumin powder, 1/2 tsp garam masala, handful chopped coriander leaves and handful chopped fresh mint leaves. Stir it well, add a little water and let it cook. Mash the tomatoes which aren’t mashed yet.
  • Now we’ll plate it nicely. First we’ll splurge 2-3 tsp of curd, spread 1 tsp of red chutney over it and 1 tsp green chutney. Then we’ll put the crispy potato cutlet over it. Place the tomato chutney on the cutlets. Put another cutlet on the chutney and one more layer of the tomato chutney. Spill some curd, red chutney, and green chutney over it. Add a pinch of coriander powder. And one more layer of cutlet and tomato chutney with curd, red chutney and green chutney. A pinch of red chilli powder, 1-2 long chopped green chillies, handful long chopped ginger, a few mint leaves and a dressing of red chutney. The yummy tomato chat is ready to eat.
