Christmas Roast Chicken


For the marination:

2 tbsp Oil


1 tsp Black Pepper Powder

1 tbsp Sage

1 tsp Christmas Spice Mix (Cinnamon-Cardamom-Clove-Nutmeg)

1 tsp Dark Soy Sauce

2 tbsp Barbeque Sauce

½ cup Orange Juice

For Butter Mix:

1/2cup Butter

1 tsp chopped Parsley

3-4 cloves of smashed Garlic

Salt to taste

1 tsp Black Pepper Powder

Other Ingredients:

1 whole Chicken with skin

Few Onion whole rings

Few pieces of Carrot Sticks

Few boiled Potato Wedges with Skin

For the sauce:

1 glass Red Wine

1 tbsp Orange Juice

Salt to taste

1 tsp crushed Pepper 

1 tb sp chilled Butter

Freshly chopped Parsley to Garnish



  • First, take a bowl and add some oil, salt, black pepper, some sage and cardamom, nutmeg, some cloves, and cinnamon. Then add some dark soy and barbeque sauce and orange juice and mix everything. 
  • Now take a small bowl to add some butter, salt, pepper, and parsley, some smashed garlic, and combine everything well and now rub this butter mix on and inside the skin of the chicken.
  •  Once the chicken is fully rubbed with butter mix, now rub the spice marination on the chicken, in the same manner, the way it was done with butter mix.
  •  Now take an oven tray put add some vegetables like carrots, tomatoes onions, and potatoes with skin in marination, and then add the marinated chicken to the tray.
  • Put this tray into the oven and cook for about 15 minutes in 180-degree C. Once it’s done take it out. 
  • Now for the sauce, take a saucepan, put some red wine, some orange juice, salt for taste pepper, and mix well. 
  • Now put off the flame and add some chilled butter into this sauce and whisk well. Your red wine sauce is ready. 
  • Now cut the chicken as per your desired pieces and pour the red wine sauce over it and garnish with some parsley and serve hot.
