  • 1 cup Sliced Onion
  • 8-9 Curry Leaves
  • Salt, to taste
  • 1 tsp Turmeric Powder
  • 1/2 tsp Red Chili Powder
  • 2-3 Boiled Potatoes, crushed

Method:

For Dosa:

  1. Grind semolina, gram flour, and wheat flour into a fine powder using a grinder. Transfer the mixture into a bowl.

  2. Add yogurt, salt, and water to the mixture. Mix well to form a smooth batter. Let it rest for some time.

  3. Just before making dosas, add baking soda to the batter and mix well.

  4. Heat a dosa pan and grease it with oil. Sprinkle water to check if the pan is hot enough.

  5. Pour a ladle full of batter onto the pan and spread it in a circular motion to form a dosa. Drizzle some oil around the edges.

  6. Once the bottom side is cooked to a golden brown color, flip the dosa and cook the other side as well.

  7. Spread a portion of aloo masala on one half of the dosa and fold it over. Repeat the process to make more dosas.

For Aloo Masala:

  1. Heat coconut oil in a pan. Add mustard seeds and let them crackle.

  2. Add split black lentils, whole dry red chili, slit green chilies, sliced onion, and curry leaves. Saute until the onions turn translucent.

  3. Add salt, turmeric powder, and red chili powder. Mix well.

  4. Add the boiled and crushed potatoes to the pan. Stir well to combine all the ingredients.

  5. Cook the masala for 2-3 minutes, allowing the flavors to blend together.
