Sweet Potato Cups


2 no sweet potato         

2 tsp oil

For stuffing

2 tsp oil

1 tsp chopped garlic                          

1 rosemary             

to taste salt                         

1 cup corn                         

1 cup chopped onion              

1 cup chopped bell peppers   

1 tsp paprika powder

1/4 tsp black pepper              

6-7 olives 

1/2 cup cream 

½ big cube cheese

1 tsp black pepper

For tomato salsa

½ cup chopped tomato

½ cup chopped onion

2 chopped green chili

20gm chopped coriander

1 tsp lemon juice

To taste salt


  • Boiled or microwave the sweet potato 

  • Peel and cut sweet potato into equal cup size

  • heat oil in a pan and make crispy sweet potato cup

for stuffing

  • Meanwhile in a hot pan add oil, chopped garlic, chopped onions, rosemary, boiled corn. Bell   peppers, with salt, and paprika.

  • Then add the remaining boiled sweet potato. 

  • Then add fresh cream and lots of cheese and finish with crush black peppers.

For sweet potato cups

  • scoop the potato with a potato scooper or spoon.

  • Now stuff the sweet potato cup with the mixture prepared

For tomato salsa

  • In a bowl add chopped tomato, chopped onion, chopped green chili chopped coriander, and salt and lemon juice, mix them together to form a salsa

           For serving

  • Serve sweet potato cups with fresh tomato salsa
