For Poori:

  • 1 cup Wheat flour
  • 1 tsp Salt
  • 1 tsp Ajwain
  • 1 tbsp Oil
  • Water (as required)

For Garnish:

  • Mango
  • Saffron strands





1. Mango Shrikhand:

  1. Wash and clean the mangoes. Peel the skin and remove the pulp, transferring it to a bowl.
  2. Blend the mango pulp in a mixer jar along with powdered sugar, green cardamom powder, and saffron until smooth.
  3. Hang the curd in a muslin cloth for 2-3 hours to remove excess water.
  4. Sieve the hung curd and mango puree to get a smooth consistency. Refrigerate to cool.

2. Poori:

  1. In a bowl, mix wheat flour, salt, and ajwain. Add oil and knead into a tight dough, adding water gradually as needed.
  2. Knead well until the dough comes together smoothly.
  3. Divide the dough into small portions and roll each portion into a flat round shape using a rolling pin.
  4. Heat oil in a frying pan and fry the rolled pooris until golden brown on both sides. Remove from the pan and set aside.

3. Assembling:

  1. Take a serving bowl and place the chilled mango shrikhand in it.
  2. Garnish with chopped mangoes and saffron strands.
