Gujarati Masala Chaas

Ingredients
For Chaas Masala
Black pepper – 1 tbsp
Cumin seeds – 1 tbsp
For plain chaas
Curd – 1cup
Milk – ½ cup
Water – ½ cup
Salt – 1 tsp
For Gujarati masala chaas
Coriander and Cumin powder – 2 tsp
Plain chaas - 1 cup
Black salt – 1 tsp
Chaat masala – 2 tsp
Chopped coriander – 1 tbsp
For smoked chass
Charcoal (for smoking) – 1nos
Plain chaas - 1 cup
Chaas masala – 1 tsp
Black salt - 1 tsp
Chaat masala - 1 tsp
Chopped coriander - 1 tsp
For Rajasthani masala chaas
Curd - ½ cup
Milk - ¼ cup
Water - ¼ cup
Chaas masala - 1 tsp
Chopped green chili – 1 tsp
Chopped mint – 1 tsp
Chopped ginger – 1 tsp
Chopped coriander – 1 tsp
Pudina powder – 1 tsp
Method
For chaas masala
Heat a thick bottom pan and roast black pepper and cumin seeds
Pound the roasted spice in the mortar and pestle and your chaas masala is ready.
For plain chaas
In a bowl pour curd, milk, water and mix it well now add salt and mix it again, your plain chaas is ready
For gujarati masala chaas
In a bowl put coriander powder,cumin powder and 1 cup plain chaas mixture, water and mix it well and your gujarati chass is ready.
For smoked chaas
On another flame burn the charcoal till its amber in color
Pour 1 cup plain chaas in another bowl and add water and mix it.
Now add chaas masala, black salt, chaat masala, chopped coriander and mix it well.
For smoking of chaas either you can place live charcoal on a “katori” or on a silver foil.
Pour oil on charcoal to give smoke to chaas.
Cover the chaas bowl quickly to infuse smoke in chaas for 3 minutes.
After 3 minute remove the cover and your smoked chaas is ready.
For Rajasthani masala chaas
Grind together chopped mint, coriander, green chili, ginger, chaas masala, mint powder, curd and grind it together.
In a bowl pour curd, grind mixture, milk, water and mix it well.
Finish the chaas with black salt and give a nice mix and your chaas is ready.
