Recipe of Handi Paneer

 

 

Ingredients:

 

  • Cottage Cheese (Paneer)
  • Oil
  • Ghee
  • 4-5 Bay leaves
  • 2 Black Cardamom
  • 5-6 Cloves
  • A handful of Peppercorns
  • 1 cup finely chopped Onions
  • 2 tsp Ginger-Garlic paste
  • 1 tsp Green Chilli paste
  • 1 tsp Turmeric powder
  • 1 tsp Red Chilli powder
  • 1 tsp Coriander powder
  • 1 bowl chopped Tomatoes
  • 1 tbsp Tomato puree
  • 4 tsp Cashew nut paste
  • Handful of Khoya/Mawa
  • Salt to taste
  • 1 tsp Garam Masala
  • 1 tsp Cardamom powder
  • 1/2 tsp Mace powder
  • 2 tsp Butter
  • 1 cup Cream
  • 1 bowl freshly chopped Coriander leaves
  • 1 big pinch dry Fenugreek leaves powder

 

 

Method:

 

  1. Heat some oil and add 2 tsp of ghee in a cooking pan. Once heated, add 4-5 bay leaves, 2 black cardamoms, 5-6 cloves, and a handful of peppercorns. Roast them until a nice aroma arises.

  2. Add 1 cup of finely chopped onions and sauté until they turn brown.

  3. Once the onions are browned, add 2 tsp of ginger-garlic paste, 1 tsp of green chilli paste, and a little water. Cook them together.

  4. Add 1 tsp of turmeric powder, 1 tsp of red chilli powder, and 1 tsp of coriander powder. Stir well and cook.

  5. Mix in 1 bowl of chopped tomatoes and a little water. Stir and cover, allowing it to cook until the oil starts to ooze out.

  6. Add a good amount of water and bring it to a boil.

  7. Stir in 1 tbsp of tomato puree and 4 tsp of cashew nut paste mixed with water. Also, add a handful of khoya/mawa. Cook everything together.

  8. Season with salt, 1 tsp of garam masala, 1 tsp of cardamom powder, and 1/2 tsp of mace powder. Let it cook for a few minutes.

  9. Add 2 tsp of butter, 1 cup of cream, and a handful of chopped coriander leaves. Mix well.

  10. Finish with a big pinch of dry fenugreek leaves powder.

  11. Dice some paneer and place them in a serving bowl. Pour the gravy over it.

  12. Garnish with more khoya/mawa and fresh coriander leaves.
