Ingredients

For Muthiya

2 cup Chopped Fenugreek

4-5 tsp Garam Flour Salt as per Taste

2 tsp Sugar

1 tsp Red Chilli Powder

1 tsp Ghee

2 tsp Lemon Juice

5-6 tsp Oil Oil for frying

For Masala

1/2 cup Sev Powder

1-2 Tsp Coconut Powder

½ tsp Salt

½ tsp Turmeric Powder

2 tsp Red Chilli Powder

1 tsp Sugar

2 tsp Lemon Juice

1 tsp Red Chilli & Ginger Paste

½ cup Fenugreek leaves

1 no Raw Banana

2-3 Brinjal

2-3 Bhavnagar Chili

3-4 Curry Leave

1-2 Bay Leaves

1-2 Star Anise

1 cup Chopped Green Garlic

2 tsp Ginger Garlic Paste Vegetable and Beans

1/2 cup Field Beans

1/2 cup Green Peas

1/2 cup Green Chawli

1/2 cup Green Pigeon Peas

1/2 cup Indian Broad Beans

1/2 cup Cow Pod

1/2 cup Chopped Potato

1/2 cup Chopped Brinjal

1/2 cup Surti Ratalu

1/2 cup Chopped Cauliflower

1/2 cup Tomato

Salt to taste

1/2 tsp Turmeric Powder

1/2 tsp Coriander Powder

1/2 tsp Garam Masala

1/2 tsp Red Chili Powder

1 tsp Lemon juice Water as per required

Fresh Coriander for garnish

Method

Muthiya

1. In a bowl add chopped fenugreek leaves, gram flour then add some salt, sugar, red chili powder, ghee, and lemon juice. Mix it and make a small ball and fry in oil and keep the heat on low flame. Once done remove it on a plate and keep it aside.

2.Now take a plate and mix coconut powder or peanut powder then add some salt, turmeric powder, red chili powder, lemon juice, red chili and ginger paste, and some fenugreek leaves then mix them together to make masala that needs to be stuffed in vegetables.

3. Partially cut the Raw Banana, Brinjal, Bhavnagar Mirchi and stuff it with masala that was made earlier.

4. Cut all remaining vegetables into small dice.

5. Heat a pressure cooker add oil, curry leaves, bay leaves, star anise, green garlic, and ginger garlic paste, and sauté it.

6. Then add some field beans, green peas, some green chawli, green pigeon peas and mix them together.

7.Then add some cow pod and chopped potatoes. Chopped brinjal, some chopped sure ratalu, and some small size chopped cauliflower.

8. Then add all dry masala powders like salt to taste, turmeric powder, some coriander powder and a pinch of garam masala, some red chili powder, and some sugar, and finally some lemon juice and the masala that we had prepared earlier. Then add some water and mix it well.

9. Then add the stuffed vegetables to the pressure cooker along with the other vegetables and let it cook for at least 3 whistles in the pressure cooker on low flame. Then add the fried muthiyas to the cooker and cook it for just 5 more mins.

10. Garnish Undhiyu with freshly chopped coriander and it’s ready to serve with puri. (UNDHIYU ) RECIPES
