For Potato Fries:

  • Oil, for frying
  • 4 large Potatoes
  • Salt, to taste

For Indian Masala:

  • 1 tsp Red Chilli Powder
  • 1 pinch Citric Acid
  • 1/2 tbsp Salt
  • 1 tsp Castor Sugar
  • 1 tsp Chaat Masala
  • 1 tsp Coriander Powder
  • 1 tsp Garam Masala
  • 1 tsp Kasoori Methi (Dried Fenugreek Leaves)

For Peri Peri Masala:

  • 2 tbsp Red Chilli Powder
  • 1 tsp Castor Sugar
  • 1 tsp Salt
  • 1 pinch Citric Acid
  • 2 tbsp Garlic Powder
  • 1 tsp Dried Thyme
  • 1 tsp Dried Oregano
  • 1 tsp Black Pepper
  • 1/2 tsp Onion Powder

 

 

Method:

 

  1. Prepare Potatoes: Peel and wash the potatoes, then cut them into finger-shaped pieces. Season with cornflour, salt, pepper, red chilli powder, and a little water to ensure the cornflour sticks well to the potatoes. Coat them evenly.

  2. Deep Fry: Heat oil for frying and deep fry the coated potato fingers until they are crispy and golden brown. Remove excess oil by placing them on a tissue paper.

  3. Prepare Schezwan Sauce: In a wok, heat some oil. Add chopped garlic, green chillies, and ginger. Then, add dried red chilli paste, a little water, tomato ketchup, salt, and soya sauce. Mix well to make Schezwan sauce.

  4. Prepare Peri Peri Sauce: In the same wok, add vinegar, more soya sauce, red chilli sauce (optional), and mix. Adjust seasoning according to taste.

  5. Thicken Sauce: Make a slurry with cornflour and water. Add it to the wok to give the sauce a nice glossy texture.

  6. Finish Dish: Add chopped spring onion greens to the sauce. Adjust the consistency if needed, then quickly add the fried potatoes. Toss well to coat the potatoes with the sauce.
