Healthy Millet Pancake 

Millet pancakes are a delicious and nutritious alternative to traditional pancakes. Ingredient: 

Potatoes 2-3 pcs

Carot ½ cup

Spring onions ½ cup

Onion chopped ½ cup 

Chopped fresh coriander 1 tbsp 

Green chilli 1 tsp 

Jowar flour 1 cup

Besan ½ cup 

White sesame 2 tbsp

Salt 1 tbsp 

Turmeric 1 tsp 

Garam masala 1 tsp 

Black pepper 1 pinch 

Water 1 cup 

Oil ½ tbsp 

 

Method:

To begin, gather your ingredients: potatoes, carrots, green onions, fresh coriander, onions, green chilies, jowar flour, besan (gram flour), white sesame seeds, salt, turmeric powder, black pepper powder, water, oil, and tomato ketchup.

Start by taking some potatoes and giving them a good wash. Once they are clean, peel off their skins using a peeler. Next, grate the potatoes into a bowl and add some water to it. Give it a gentle stir and then wash the grated potatoes twice. This step helps to remove excess starch from the potatoes.

After washing, strain the grated potatoes using a sieve or a colander to remove the water. Then, squeeze the grated potatoes firmly to remove any remaining moisture. Transfer the squeezed potatoes to a separate bowl.

Now, it's time to add grated carrots to the bowl of grated potatoes. The carrot adds a hint of sweetness and colour to the pancakes. Chop some green onions, fresh coriander, and onions finely. Also, finely chop some green chilies if you enjoy a bit of spiciness. Add all these ingredients to the bowl with the potatoes and carrots.

Next, add jowar flour and besan (gram flour) to the mixture. Besan flour helps to bind the ingredients together and give the pancakes a nice texture. Sprinkle in some white sesame seeds for added crunch and flavour. Season the batter with salt, turmeric powder, and black pepper powder to taste. Mix everything well.

As the batter might thicken up, gradually add some water and mix it until you achieve a medium thick consistency. Set the batter aside to rest while you heat up a flat pan.

Heat the pan and add some oil, spreading it evenly across the surface. Once the pan is hot, take a spoonful of the batter and spread it on the pan to form a medium-thick pancake. Sprinkle some sesame seeds on top for an extra touch of flavour and texture.

Cook the pancake on medium to low flame until the bottom turns golden brown. Then, carefully flip it over and cook the other side until it becomes crispy and golden brown as well. Repeat this process with the remaining batter until you have made all the pancakes.

Once the pancakes are ready, remove them from the pan and place them on a serving plate. These healthy millet pancakes are delicious on their own, but they can be enjoyed even more with a side of tomato ketchup for dipping.
