Masala Bharwa Baingan
Ingredients
For the Stuffing-
2tbsp Mustard Oil.
Salt.
1tbsp Dry Mango Powder.
1tbsp Fennel Seed Powder.
1tbsp Turmeric Powder.
1tbsp Red Chilli Powder.
2tbsp Coriander Powder.
For the tempering-
2tbsp Mustard Oil.
1tbsp Cumin Seeds.
1tbsp Mustard Seeds.
1 cup Chopped Onions.
1tbsp Ginger-Garlic paste.
1/2tsp Turmeric Powder.
1tsp Red Chilli Powder.
1tsp Coriander Powder.
Salt to taste.
1 cup Tomatoes.
1/4 cup Cashew Nut Powder.
Handful chopped Coriander.
Method
- For the stuffing.
- Take a bowl and mix 1tbsp Dry Mango Powder, 1tbsp Fennel seed powder, 1tbsp Turmeric Powder, 1tbsp Red Chilli Powder, Salt to taste, 2tbsp Coriander powder, and 2tbsp Mustard oil in it. Mix all these nicely to make it a nice mixture.
- Heat a cooking pot on one side and then add 2tbsp of Mustard Oil in the hot cooking pot and add 1tbsp Cumin Seeds and Mustard seeds and allow it to crackle.
- Then add 1 cup of chopped Onions and saute.
- As the Onions are getting brown fill the Eggplants/Brinjals with stuffing the masala.
- Now add 1tbsp of Ginger-Garlic paste to the Onions and saute it nicely.
- Then add 1/2tsp Turmeric powder, 1tsp Red Chilli powder, 1tsp Coriander powder, and salt to taste. Mix it.
- Now add 1 cup of chopped Tomatoes and cook everything together.
- Then add some water to the tempering and put the stuffed Brinjals into it and add some more water over it.
- Cover it with a lid and let it cook for about 5-10 minutes.
- After 5 to 10 mins add 1/4 cup of Cashew nut powder to give more richness and flavour to it and then a handful of chopped Coriander over this and mix it nicely.
- Plate it nicely and serve it hot.
