  • 1 tbsp Sugar
  • 1 tsp Dry yeast
  • 1 cup Refined flour
  • 1/2 tsp Salt
  • Water (as required)
  • 1 tbsp Olive oil

For Stuffing:

  • 1 tbsp Oil
  • 1/2 cup Onion, chopped
  • 1 tbsp Garlic, chopped
  • 1 tsp Chilli flakes
  • 1 tsp Oregano
  • 1 tsp Salt
  • 1/2 tsp Black pepper powder
  • 1 cup Tomato puree
  • 1/2 cup Yellow capsicum, cubed
  • 1/2 cup Red capsicum, cubed
  • 1/2 cup Baby corn
  • 1/2 cup Mushroom
  • 1/4 cup Corn kernels, boiled
  • 6-7 pcs Basil leaves
  • 1/2 cup Mozzarella cheese

 

 

Method:

 

Dough Preparation:

  1. In a bowl, mix lukewarm water, sugar, and dry yeast. Let it sit for 2-3 mins to activate.
  2. Mix refined flour and salt on a flat plate, creating a well in the center.
  3. Pour the activated yeast mixture into the well, adding water as needed. Knead into a smooth dough.
  4. Add olive oil and knead until consistent. Cover the dough and let it rise for 40-50 mins.

Pizza Pocket Stuffing:

  1. Heat oil in a pan. Sauté onions and garlic until golden brown.
  2. Add chilli flakes, oregano, salt, and black pepper. Sauté, then add tomato puree. Cook for 4-5 mins until thickened.
  3. Add capsicums, baby corn, mushrooms, and corn kernels. Cook until vegetables are tender. Add basil leaves, mix, and let it cool.

Assembly and Baking:

  1. Preheat oven to maximum temperature.
  2. Take a portion of dough, dust with flour, and roll into an oblong shape.
  3. Place stuffing and mozzarella cheese on one side. Fold dough, sealing edges with water.
  4. Place pockets on a baking tray lined with parchment paper, brush tops with milk.
  5. Bake at 200°C for 8-10 mins until golden brown.
