Ingredients


For the stuffing:

2 tbsp Ghee / Clarified Butter

1/2tsp Cumin Seeds

1 tsp Hing / Asafoetida

1 tsp chopped Ginger & Green Chillies

1 cup Pithi / Soaked Moong Daal

1/2cup chopped Cashew

1 tsp Red Chilli Powder

1/2tsp Turmeric Powder

1 tsp Coriander Powder

Salt to taste

Water

1 tbsp chopped Coriander Leaves

1 tbsp chopped Dates

1 tsp Amchur Powder

For Aloo Tikki:

2 cups Boiled & Mashed Potatoes

1 tsp roasted Cumin Powder

Salt to taste

2 tbsp Corn Flour

Pithi Stuffing

1/2cup Ghee / Clarified Butter

For Curd Mix:

1 cup Yogurt

Black Salt to taste

1 tsp Powdered Sugar

 

Method

For Stuffing:

  • Take a pan. Put some ghee.
  •  Then add some cumin seeds, hing, chopped ginger, chopped green chilies and sauté everything then add soaked moong daal and saute it  for some time.
  •  Now add some salt, water, some cashew nuts, red chilli powder, turmeric powder and coriander powder combine everything well and cover the lid and let it cook for a few minutes .
  • Then add amchur powder, dates, and coriander leaves and mix everything well.
  • And Your stuffing is ready.

For Aloo Tikki:

  • Take a big bowl.
  •  Put the mashed potatoes and add cumin powder, salt, cornflour, and combine everything well.
  •  Now take a small portion of the potato and make a round and flat ball.
  •  In the middle of the flat ball, put a generous amount of the pithy stuffing.
  •  Now gently with the help of your fingers and palm wrap the potato from all its sides so that the stuffing stays inside only.
  •  Now put this Tikki onto a plate and dust it with some cornflour.
  •  Now take a pan.
  •  Put some ghee.
  • Put the Tikki one by one and then fry them till they become crispy and golden brown.
  • Once the Tikki is done, take them out on a plate.
  • Now in a bowl, put some curd, black salt, and powdered sugar and mix everything.
  • Now in another bowl, mix all the spices for the Tikki masala.
  •  Finally, take a serving plate, put the Aloo Tikki, and break it from the middle. Add a generous amount of curd mix, tamarind, green chutney, and spice mix.
  •  Top it with ginger, green chilies, coriander leaves, and pomegranate seeds.
  • Serve it and, Enjoy!
