Recipe of 2 Ways Chutney

 

Ingredients:

 

For Tomato Chutney:

  • 2 tbsp oil
  • ½ cup chana dal
  • 3 tomatoes, diced
  • 1 tsp Hing (asafoetida)
  • 6-7 garlic cloves
  • 2-inch ginger, chopped
  • 1 cup sliced onion
  • 2 whole red chilies
  • 5-6 curry leaves
  • 1 green chili
  • Salt to taste
  • 1 tsp turmeric
  • 1 tsp red chili powder
  • 3 tsp tamarind pulp
  • 1 tsp jaggery

For Onion Chutney:

  • 4 onions, chopped
  • 1 tomato, diced
  • 1 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp peppercorns
  • 1 tbsp chana dal
  • 1 tsp methi seeds (fenugreek seeds)
  • 8-10 curry leaves
  • 2-3 green chilies
  • 8-10 garlic cloves
  • 1-inch ginger, chopped
  • 2-3 whole red chilies
  • Salt to taste
  • 2 tsp tamarind pulp
  • 1 tsp jaggery

For Tadka:

  • ½ cup chana dal
  • 1 tbsp urad dal
  • 1 tsp mustard seeds
  • 4-6 round red chilies
  • 1 tbsp curry leaves

 

 

Method:

 

For Tomato Chutney:

  1. Heat oil in a pan.
  2. Add chana dal and roast for a minute.
  3. Add Hing, garlic, ginger, sliced onion, whole red chili, and curry leaves. Toss all ingredients.
  4. Add diced tomatoes, green chili, salt, turmeric, red chili powder, and cook till tomatoes become soft with a little water.
  5. Then add tamarind pulp and jaggery. Allow it to cool and grind to a smooth chutney.
  6. Pour the tadka over the chutney and mix well.

For Onion Chutney:

  1. Roast the onions until they change color.
  2. Heat oil in a pan, add mustard seeds, peppercorns, chana dal, methi seeds, and roast.
  3. Then add curry leaves, green chilies, garlic, ginger, whole red chilies, and toss.
  4. Add roasted onions, diced tomatoes, salt, and water. Cook till tomatoes become soft.
  5. Then add tamarind pulp and jaggery. Allow it to cool and grind to a smooth chutney.
  6. Pour the tadka over the chutney and mix well.

For Tadka:

  1. Heat oil in a pan, add chana dal, urad dal, mustard seeds, round red chilies, and curry leaves. Allow it to crackle.
  2. Pour the tadka over the chutney. Mix well before serving.
