Recipe of Raj Kachori

 

Ingredients:

 

For Green Chutney:

  • 1 tbsp Mint leaves
  • 1/2 bunch Green coriander leaves
  • 1 Green chili
  • 4-5 Garlic cloves
  • 1/4 piece Raw mango
  • Salt, to taste
  • 1 tsp Roasted cumin powder

For Curd:

  • 1 bowl Curd
  • 1 tsp Powdered sugar
  • Black salt, to taste

For Sweet Chutney:

  • 1 cup Tamarind juice
  • 1 cup Jaggery
  • 1 tsp Red chili powder
  • Black salt, to taste
  • 1 tsp Roasted cumin powder

For Dough:

  • 1 cup Semolina
  • 1/4 cup Flour
  • Salt, to taste
  • 1 tsp Oil

For Finishing:

  • Oil, for frying
  • 1 tbsp Boiled diced potato
  • 2 tsp Chaat masala
  • 2 tsp Roasted cumin powder
  • 1 tbsp Boiled chola (chickpeas)
  • 2 tsp Boiled moong dal (split green gram)
  • 1 tsp Red chili powder
  • 1 tsp Black salt
  • 1 tsp Green chutney
  • 2 tsp Sweet chutney
  • 1 tbsp Curd
  • 2 Crushed papadis
  • 1 tsp Masala chana dal
  • 1 tsp Pomegranate seeds
  • 1 tsp Chopped coriander leaves

 

 

Method:

 

For Green Chutney:

  1. Grind mint leaves, green coriander leaves, green chili, garlic cloves, raw mango, salt, and roasted cumin powder into a fine paste using water or ice cubes.

For Curd:

  1. Mix curd with powdered sugar and black salt.

For Sweet Chutney:

  1. In a pan, boil tamarind juice, jaggery, red chili powder, black salt, and roasted cumin powder until it thickens to make the sweet chutney.

For Dough:

  1. Mix semolina, flour, salt, and warm water to form a semi-hard dough.
  2. Apply oil to the dough and let it rest for half an hour.

For Finishing:

  1. Roll out the dough and cut it into round shapes.
  2. Deep fry the kachoris until golden brown.
  3. On a plate, garnish with curd, green chutney, sweet chutney, and place the kachori in between.
  4. Stuff the kachori with boiled potato dice, chaat masala, roasted cumin powder, boiled chola, boiled moong dal, red chili powder, black salt, green chutney, sweet chutney, curd, green chutney, sweet chutney, crushed papdi, masala chana dal, pomegranate seeds, and chopped coriander leaves.
  5. Serve the Raj Kachori immediately.
