For Boiled Eggs:

  • 4-5 Eggs
  • ½ tsp Salt
  • ½ tsp Turmeric powder
  • ½ tsp Red chilli powder
  • 1 tbsp Oil
  • ½ cup Diced onion
  • ½ cup Diced capsicum

For Curry:

  • 2 tbsp Oil
  • 1 inch Cinnamon
  • 4-5 Cloves
  • 2 Black cardamom
  • 4 Green cardamom
  • 3 Bay leaves
  • 2 Dry red chillies
  • 5-6 Black pepper
  • 3 cups Chopped onion
  • 2 tsp Chopped garlic
  • 2 tsp Chopped ginger
  • 2 tsp Ginger & garlic paste
  • 1 tsp Salt
  • 1 tsp Turmeric powder
  • 1 tsp Red chilli powder
  • 2 tsp Coriander powder
  • 3 Green chillies
  • ½ cup Curd
  • 1 cup Tomato puree
  • 2 cups Chopped tomato
  • 1 tsp Saunf (Fennel) powder
  • Water, as required
  • 1 tbsp Kasuri methi (Dried fenugreek leaves), soaked

 

 

Method:

 

Step 1: Boiling the Eggs

  1. Boil the eggs in water for 8-10 minutes until they are hard-boiled.
  2. Strain the eggs, peel them, and marinate with salt, turmeric powder, and red chilli powder.
  3. In a pan, heat oil and sauté the marinated eggs along with diced onion and capsicum. Set aside.

  1. Heat oil in a pan and add cinnamon, cloves, black cardamom, green cardamom, bay leaves, dry red chillies, and black pepper. Sauté until aromatic.
  2. Add chopped onions and sauté until golden brown.

  4. Add salt, turmeric powder, red chilli powder, and coriander powder. Mix well.

  8. Add tomato puree and cook for 4-5 minutes.
  9. Add chopped tomatoes and cook until they are mushy.

  11. Transfer the sautéed eggs and vegetables into the curry. Simmer for 2-3 minutes.
  12. Add soaked kasuri methi and let the flavors meld for a few more minutes.
