Ingredients:

 

For Chutney:

  • 1 cup Soya bean (bhattmaas)
  • 1 cup Sesame seeds
  • 1 tbsp Oil
  • 1 tbsp Chopped garlic
  • 1 tsp Chopped green chili
  • 1 cup Chopped tomato
  • 1 tsp Salt

For Stuffing:

  • 1 tbsp Oil
  • 1 tbsp Chopped garlic
  • 1 tbsp Chopped ginger
  • 2 tbsp Chopped onion
  • 2 tbsp Chopped cauliflower
  • 2 tbsp Chopped cabbage
  • 2 tbsp Chopped fresh beans
  • 2 tbsp Chopped carrot
  • 1 tsp Salt
  • 1 tsp Dark soya sauce
  • 1 tsp Schezwan sauce

For Momo Dough:

  • 1 cup Maida (all-purpose flour)
  • 1 tbsp Oil

For Soup:

  • 1 tbsp Chopped garlic
  • 2 tbsp Chopped carrot
  • 1 tbsp French beans
  • 1 tbsp Cabbage
  • 1 tsp Chopped ginger
  • 2 tsp Schezwan sauce
  • 1 tsp Dark soya sauce
  • 1 tsp Salt
  • 2 tbsp Bhattmaas chutney

For Garnish:

  • 1 tsp Chili oil
  • 1 tsp Chopped coriander
  • 1 tsp White sesame
  • 1 tsp Black sesame

 

 

Method:

 

For the Bhattmaas Chutney:

  1. Roast the soya beans until they are completely roasted, then roast the sesame seeds in the same pan. Keep them in separate bowls.
  2. In a pan, heat oil and add chopped garlic, chopped green chili, chopped tomato, and salt. Cook until the tomatoes become mashy.
  3. Add the tomato mixture to the roasted soyabean and roasted sesame seed mixture and make a fine paste.
  4. Return the chutney to the pan and cook until it becomes thick and glossy.

For the Stuffing:

  1. In a pan, heat oil and add chopped garlic, chopped ginger, chopped onion. Saute until golden brown.
  2. Add chopped cauliflower, chopped cabbage, chopped French beans, chopped carrot. Cook until the water dries out from the vegetables.
  3. Add salt, dark soya sauce, schezwan sauce, and cook until it dries up. Keep aside to cool.

For the Momos:

  1. Make a smooth dough with maida, oil, and water. Knead well.
  2. Take small dough balls and flatten them into small discs. Stuff with the prepared vegetables and fold from the edges.
  3. Steam the momos for about 8-10 minutes.

For the Soup and Finishing:

  1. In a saucepan, add oil, chopped garlic, and cook until golden brown. Add chopped carrot, French beans, cabbage, ginger, and saute well.
  2. Add water or vegetable stock and boil for a few minutes.
  3. Add schezwan sauce, dark soya sauce, salt, and bhattmaas chutney. Cook until the soup thickens.
  4. Place the steamed momos on a serving plate. Pour the soup over the momos.
