Vegetable Soupy Momos
Ingredients:
For chutney
- Soya bean (bhattmaas) – 1cup
- Sesame seeds – 1cup
- Oil – 1tbsp
- Chopped garlic – 1tbsp
- Chopped green chili – 1tsp
- Chopped tomato – 1cup
- Salt – 1tsp
For stuffing
- Oil – 1tbsp
- Chopped garlic – 1tbsp
- Chopped ginger – 1tbsp
- Chopped onion – 2tbsp
- Chopped cauliflower – 2tbsp
- Chopped cabbage – 2tbsp
- Chopped fresh beans – 2tbsp
- Chopped carrot – 2tbsp
- Salt – 1tsp
- Dark soya sauce – 1tsp
- Schewzan sauce – 1tsp
For Momo dough
- Maida – 1cup
- Oil – 1tbsp
For soup
- Chopped garlic – 1tbsp
- Chopped carrot – 2tbsp
- French beans – 1tbsp
- Cabbage – 1tbsp
- Chopped ginger – 1tsp
- Schewzan sauce – 2tsp
- Dark soya sauce – 1tsp
- Salt – 1tsp
- Bhattmaas chutney – 2tbsp
For garnish:
- Chili oil – 1tsp
- Chopped coriander – 1tsp
- White sesame – 1tsp
- Black sesame – 1tsp
Method
For the Bhattmaas Chutney
- Start with roasting of soya beans, it will take 5-10 min to get completely roasted for the chutney, then roast the sesame seeds in the same pan and keep both the ingredients in two different bowls.
- In pan pour oil, add chopped garlic, chopped green chili, chopped tomato, salt and cook it till tomatoes become mashy.
- Add the tomato mixture in the roasted soyabean and roasted sesame seed mixture and make a fine paste.
- Return the chutney to the pan and cook till it becomes thick and glossy.
For the stuffing:
- In a pan pour oil then add chopped garlic, chopped ginger, chopped onion and Saute it, then continue adding other vegetables like chopped cauliflower, chopped cabbage, chopped French beans, chopped carrot and let everything cook properly till the water dries out from the vegetables .
- Now add salt , dark soya sauce, schezwan sauce, and cook it till it dries up, keep aside to cool.
For the Momos
- Make a smooth dough for the momos with maida, oil and water, knead the dough well, the dough should be semi soft in texture
- Now take small dough balls and flatten them in small discs, stuff it with the prepared vegetables and fold from edges as shown in the video, and your amazing momo is ready to steam,
- Place it in a steamer making sure you oil the base plate on which the momos are placed to be steamed.
- Steam the momos for about 8-10 minutes . Enjoy them with the spicy bhattmaas chutney or if you want to enjoy soupy momos then lets look at the final step of the recipe.
For the Soup and finishing
- In a sauce pan add oil, chopped garlic and cook till golden brown then add chopped carrot, chopped french beans, chopped cabbage, chopped ginger, and saute well
- Add water or vegetable stock and boil for a few minutes.
- Add schewzan, Dark soya sauce, salt, and bhattmaas chutney and continue to cook, the bhattmaas chutney will give thickness to soup and a great flavor also.
- Now take out the steam momos and place them on serving plate
- Pour the soup over the momos, garnish with chili oil, chopped coriander, white sesame seeds , black sesame seeds and chopped spring onion greens, And these lovely soupy momos are ready to be savoured…...
