  • 1 litre water
  • 2 bay leaves
  • 10-12 black peppercorns
  • 1 tsp salt
  • 1 tbsp sugar
  • 100 ml vinegar
  • 1 cup carrot batons
  • 1 cup beetroot batons
  • 5-6 green chillies

For Spicy Sauce:

  • 5-7 boiled Kashmiri chillies
  • 6-7 cloves garlic
  • ¼ cup olive oil
  • ½ tsp salt
  • ½ tbsp jeera powder
  • ¼ cup vinegar

For Garlic Toum:

  • 12-15 cloves garlic
  • 1 tsp salt
  • ¼ cup olive oil
  • 3 tbsp mayonnaise
  • 1 tbsp cold water

For Shawarma Spice Mix:

  • 4-5 dry Kashmiri chillies
  • 10-14 green cardamoms
  • 15-20 black peppercorns
  • 1 tbsp fennel seeds
  • 1 tbsp jeera
  • 2 tbsp coriander seeds
  • 1-inch cinnamon stick

For Paneer:

  • 250 g paneer
  • ½ tsp salt
  • 2 tbsp shawarma masala
  • 3 tbsp olive oil
  • 2 tbsp curd
  • 2 tbsp oil (for cooking)

Additional Ingredients:

  • Iceberg lettuce leaves
  • Onion slices
  • Tomato slices
  • French fries
  • Pickled vegetables

 

Method

Shawarma Bread:

  1. In a bowl, mix warm milk, sugar, and yeast. Allow it to rest for a minute.
  2. Make a well in the refined flour and salt. Pour the milk mixture into it and knead it into a soft dough.
  3. Add olive oil and knead the dough well. Cover it with a damp cloth and set it aside to proof.
  4. Once doubled in size, transfer the dough to a working surface. Divide it into portions and roll each into a thick roti.
  5. Cook the rolled rotis on a pan on both sides and puff them over direct flame.

Garlic Toum:

  1. Blend garlic cloves with salt in a mixer.
  2. Add olive oil, mayonnaise, and chilled water. Blend until it forms a smooth paste.

Spicy Sauce:

  1. Blend boiled red chillies, garlic cloves, olive oil, salt, jeera powder, and vinegar into a smooth paste.

Pickled Vegetables:

  1. Peel and cut beetroot and carrot into batons.
  2. Boil water with sugar, salt, bay leaf, black pepper, and cloves. Boil the batons and green chillies for 5-6 minutes and let them sit for 3-4 hours.

Shawarma Masala:

  1. Toast dry red chillies, green cardamom, black pepper, cinnamon, jeera, coriander seeds, and fennel seeds. Grind them into a powder.

Cooking Paneer:

  1. Marinate paneer with salt, shawarma masala, olive oil, and curd. Grill it on a pan until it gets charred marks.
  2. Cut the paneer into the desired shape and mix it with the remaining marinade.

Assembling the Shawarma:

  1. Spread garlic toum and spicy sauce on the shawarma bread.
