Cheese Burst Paratha with Garlic Chilli Chutney Recipe

 

Ingredients

For Dough:

Wheat flour 1½ cup

Refined flour 1½ cup 

Salt ½ tbsp

Warm water as required

Oil 1 tbsp

 

For Stuffing:

Butter 1 tbsp

Garlic chopped 1 tbsp

Spring onion chopped ½ cup

Ginger chopped 1 tbsp

Green chilli chopped ½ tbsp

Coriander chopped 1 tbsp

Salt ½ tsp

Black pepper powder a pinch

Mozzarella cheese grated 100 gms

 

For Garlic Chilli Chutney:

Oil ½ tbsp

Garlic 8-10 cloves

Jeera ½ tsp

Dry red chilli soaked 5-6 pcs

Tomato diced ½ cup

Salt ½ tsp

Water as required 


 

Method:

Kneading the Dough:

On a plate, combine a mix of wheat flour and refined flour, adding a pinch of salt for flavour. Slowly pour in water and start kneading until the ingredients form a soft, pliable dough. A touch of oil adds extra softness. Knead the dough to perfection, ensuring it's smooth and consistent.

Resting the Dough:

After a light coating of oil, cover the dough with a damp cloth, allowing it to rest and relax. This step lets the gluten develop and makes the dough easier to work with later.

Creating the Filling:

In a bowl, gather all your chosen stuffing ingredients. It could be a delightful mixture of grated cheese, finely chopped vegetables, aromatic spices, and a pinch of salt. Mix them thoroughly to create a flavorful and gooey stuffing.

Rolling and Stuffing:

Take a portion of the rested dough and roll it into a thin, flat circular sheet. Place a generous amount of the prepared stuffing at the centre of the dough circle.

Folding and Sealing:

Gently fold the edges of the dough over the stuffing, resembling an envelope. Ensure that all edges are sealed properly to prevent any leakage during cooking.

Cooking the Paratha:

Heat a pan and add a drizzle of oil. Carefully place the stuffed paratha onto the pan. Cook it on both sides, flipping when golden brown spots appear. The paratha should be crispy and beautifully golden.

Serving:

Once cooked to perfection, remove the paratha from the pan. As you cut into it, the melted cheese bursts out, creating a visual delight. Your Cheese Burst Paratha is now ready to be savoured.

 

Preparing the Garlic Chilli Chutney:

 

Sautéing the Aromatics:

Heat a pan and pour in a bit of oil. Add finely chopped garlic and cumin seeds (jeera). Roast them until they release a delightful aroma and turn slightly golden.

Adding the Tomatoes:

Introduce chopped tomatoes to the pan. Cook them until they turn soft and mushy, releasing their natural juices.

Introducing the Chillies:

Add soaked Kashmiri red chillies to the mixture. Sauté them briefly to infuse their vibrant colour and mild heat.

Blending into a Paste:

Transfer the sautéed mixture to a mixer jar. Add a dash of salt and a splash of water for consistency. Blend everything into a smooth and flavorful paste.
