Gajar Ka Halwa
Ingredients
1/2 ltr. Milk
3-4 Crushed Whole Cardamom
1 bowl Grated Carrots
1/2 cup Ghee / Clarified Butter
2 tbsp crushed Almonds
2 tbsp crushed Cashews
2 tbsp Pistachios
Sugar to taste
1 tsp Cardamom Powder
2 tbsp Khoya
Method
- 
 
Take a pan add some milk and crushed cardamom and let it boil for some time.
 - 
 
Now add grated carrots and mix them well.
 - 
 
Let the carrots cook in the milk till the milk evaporates, this will take atleast 25 to 30 min on medium low flame
 - 
 
Meanwhile in another pan, put some ghee, add all the crushed nuts, and roast everything together.
 - 
 
Once they are roasted and turns aromatic, transfer them into the cooked carrot mixture.
 - 
 
Add the desired amount of sugar and finally add some khoya and stir everything continuously.
 - 
 
Add ghee and cook the halwa nicely
 - 
 
Once the ghee starts oozing out from the sides of the halwa this indicates, your yummy halwa is done.

Take a serving bowl, put the delicious halwa, garnish with some pistachios and khoya and serve it hot.
