  • 75g black raisins
  • 40g orange candy
  • 40g tutti frutti
  • 1 egg (for egg wash)

For Maida Paste:

  • ¼ cup milk
  • ¼ cup all-purpose flour (Maida)

For Sugar Paste:

  • ¼ cup milk
  • ¼ cup icing sugar
  • ¼ cup apricot jam

 

 

Method:

 

For Dough:

  1. In a bowl, combine dry yeast and sugar with milk. Let it ferment.
  2. In a mixing bowl, combine all-purpose flour, nutmeg powder, allspice powder, salt, castor sugar, black raisins, tutti frutti, and orange peel.
  3. In another bowl, whisk 1 egg. Then add butter and whisk again.
  4. Add the egg-butter mixture and fermented yeast mixture to the dry ingredients. Mix well to form a dough.
  5. Knead the dough until it's smooth and elastic, similar to bread dough, to develop gluten.
  6. Shape the dough into a round ball and let it rest for 1 hour, covered with a damp cloth.
  7. After 1 hour, punch down the dough and divide it into equal portions. Shape each portion into a round ball.
  8. Place the round balls on a baking tray lined with parchment paper. Apply water on top of each ball.
  9. Let the round balls rest for another 1 hour.
  10. Preheat the oven to 200°C.
  11. After the second proofing, brush the top of each round ball with egg wash.
  12. Prepare the maida paste by mixing milk and all-purpose flour. Transfer it to a piping bag and pipe crosses on top of each bun.
