Unniyappam


Ingredients 

Rice flour              1 ½ cup

Jaggery                 ½ cup

Coconut                 2 tbsp

Ghee                      2 tbsp

Cardamom            2-3 cloves 

Nutmeg powder    a pinch                

Baking soda          ½ tsp

 

Method: 

Heat a pan, add jaggery powder, water and cook until it gets dissolved.

In a mixer jar, blend the bananas and set aside.

Heat a pan, add ghee and saute some chopped coconut until golden brown. Remove it on a plate and set aside.

Take a bowl, add rice flour, melted jaggery, blended bananas and mix them.

Add some water and make a thick batter.

Then add cardamom powder, grated nutmeg, ghee fried coconut and mix it.

Lastly add baking soda and stir it.

Heat an appam pan, apply ghee, pour some batter and clover it with a lid. Cook it on medium low flame.

Cook for 3-4 mins, then flip and cook it from the other side.

Unniyappam are ready to serve.

 

Veggies appam

Ingredients 

 

Suji                                        1 cup

Curd                                       ½ cup

Oil                                          1 tbsp

Mustard seeds                       ½ tbsp

Chana dal                              1 tbsp

Green chilli chopped              ½ tbsp

Onion chopped                      ½ cup

Curry leaves                          5-6 pcs

Capsicum chopped                ½ cup

Carrot chopped                      ½ cup

Salt                                        1 tbsp

Coconut grated                      2 tbsp

Coriander chopped                1 tbsp

Baking powder                      ½ tsp

 

Method: 

Take a bowl, add suji, curd and mix it.

Leave it aside for 20 mins.

Heat a pan, add oil, mustard seeds, chana dal and crackle them..

Then add chopped green chilli, chopped onion, curry leaves and saute them.

Add chopped capcicum, chopped carrot, salt and cook them for 1-2 minutes. 

Then add grated coconut and saute.

Add this to the appam mixture with some salt and mix them well.

Then add chopped coriander, baking soda and mix it.

Heat an appam pan, apply ghee, pour some batter and clover it with a lid. Cook it on medium low flame.

Cook for 3-4 mins, then flip and cook it from the other side. Cook until it gets golden brown crust.

Appam are ready to serve.
