Onion Kulcha



Ingredients

For stuffing:

1 cup Onion Chopped

½ tbsp Ajwain

Salt to Taste

½ tbsp Red Chilli powder

½ tbsp Turmeric powder

½ tbsp Coriander powder

½ tbsp Cumin powder

1 tbsp Ginger Chopped

1 tbsp Green Chilies Chopped

½ tbsp Fennel roasted

½ tbsp Dry Mango powder

Coriander leaves

½ cup Cheese grated

For dough:

1 cup refined flour

Salt to Taste 

½ tbsp Ajwain

1 tbsp Ghee

Water

For flavoured butter:

1 cup Soft butter

1 tbsp Green Chutney

½ tbsp Dry Mango powder

½ tbsp Red Chilli powder
 

Method

  • For Stuffing
  • Take a bowl and add some chopped onions, some salt to taste, and to remove the excess water from the onions.
  • Then add some red chili powder, some turmeric powder for taste, some coriander powder, and some cumin seeds.
  • Now add some chopped green chilies, chopped ginger also some roasted fennel seeds, some dry mango powder and mix all of this and let it rest for a while so that the water oozes out from it.
  • Now after some time takes this onion mixture put it in a muslin or cloth or strainer and squeeze the excess water out of it.
  • Then add some chopped coriander leaves and add some grated cheese and mix it well.
  • For  FlavouredButter
  • Now take another bowl to add some butter and mash it then add some green chutney to it, some amchur powder, and red chili powder and your butter chutney is ready to be served with the onion kulcha.
  • For the Kulcha dough
  • Take a bowl and add some refined flour to it and add some salt, some ajwain and some ghee then add some water and knead the dough and let it rest for a while.
  • After some time knead the dough once again and cut it into equal and small portions.
  • Make it round and flat in shape from the edges keeping the middle portion thick and the edges thin.
  • Add a small amount of the cheese onion stuffing in the middle section of the flat dough and then wrap it from the edges so that all the stuffing should be inside the paratha and Now make a nice ball shape and spread some oil and  top it with some chopped coriander  leaves  and some kalonji
  • Now roll out the dough into a nice flatbread just like roti or Indian bread, if required add some oil and roll it out.
  •  Then take a Tawa and put it on the flame, as it heats up add the paratha onto the Tawa. Once it is cooked from one side flip it to another side.
  • Then with a tong take the paratha and keep flipping it on the gas to give it a nice tandoor if you do not have the tandoor.
  • Your Onion Kulcha is ready.
  •  Serve it on a plate and top it with the flavored butter and green chili.
