Ingredients for Dough

● Maida 2 cups

● Ajwain 1 pinch

● Salt to taste

● Oil ( for shortening) 1 tbsp

● Oil for deep frying

● crushed matar 1 Cup

●   chopped coriander 1/4 Cup

●   peanut oil 2 Tbsp

●   amchoor powder 1 Tsp

●   salt  To taste

●   ginger chopped 1 Tsp

●   green chilly chopped 1 Tsp

●   jeera 1 Tbsp

●   hing  1 Pinch

●   coriander powder 1 Tsp

●   red chilly powder 1 Tsp

●   SAUNF powder 2 Tsp

●   garam masala 1 Tsp

●   white til powder 2 Tsp

●   peanut crushed2 Tbp

●   dry coconut powder 2 Tsp

●   jaggery grated 2 Tbsp

Method :.

For kachori dough

● in a bowl, add maida, ajwain, salt, and oil rubbed flour using the finger

● Add water and kneed and make the tight  dough and keep aside

 For stuffing

● Heat oil in a pan add jeera allow it to crackle add chopped ginger and chopped green chili, hing&saute it well

● Then reduce  the gas flame and add turmeric, red chili powder, coriander powder, and boiled crushed green peas

● Add saunf powder, garam masala powder, amchoor powder, fresh coriander, peanuts, coconut powder, sesame powder, and jaggery and mix it well

● Divide the  dough in equal portion of balls.

● Stuff  the kachori stuffing with green peas filling and secure it well to ensure stuffing will not ooze out during frying

● With help of palm or rolling pin, roll the dough briefly

● Then deep fry kachori in a medium slow heat and serve with
