Matar Ki Kachori



Ingredients

crushed mattar

1 Cup

 

chopped coriander

1/4 Cup

 

peanut oil

2 Tbsp

 

amchoor powder

1 Tsp

 

salt

ginger chopped

1 Tbsp

 

green chilly chopped

1 Tbsp

 

jeera

1 Tbsp

 

heeng

coriander powder

red chilly powder

SAUNF powder

garam masala

white til powder

peanut crushed

dry coconut powder

jaggery grated

Method

  • First some clean a few green peas and keep them aside.
  • Then for the dough add some refined flour in a bowl and then add some salt, some carom seeds, and 1 big spoon of oil now mix ait then add some water and knead a nice and little hard dough and then apply some oil over the dough and cover it and keep it aside for 10 to 15 mins.
  • Now take a pan and add some peanut oil and as it heats up to add some cumin seeds and then add some chopped green chilies, chopped ginger and all of its stats to crackle add some hing to it and mix it well.
  • Then put the flame on low and add some red chili powder, some turmeric powder, and some coriander powder and then along with it add some boiled and crushed peas to it and mix everything well.
  • Now add some fennel powder, some garam masala powder, some saunf powder, and some amchur powder, some chopped coriander powder, some crushed peanuts, some coconut powder, some sesame powder, and finally jaggery to give a little sweetness to the mixture and sauté all of it well.
  • Sprinkle some water over it and mix it nicely and your matar kachori stuffing is ready.
  • Now heat some oil in a cooking pot for frying the kachori. Then take the dough and knead it again for 2 mins and cut it into small round pieces.
  • Now flatten the dough with the help of your palms and make a bowl-like shape and then add a generous amount of the stuffing in it and wrap the dough to secure the stuffing inside the dough. Repeat the same to prepared the desired quantity of kachoris.
  • Slowly add them into the hot oil and fry it till it turns nice golden brown and crispy and then remove it in a plate and with the help of a tissue remove the excess oil and your matar kachori is ready.
  • Serve your Matar ki Kachori while it’s hot.
