Egg Curry



Ingredients

  • 4-5 Boiled Eggs
  • 2 tbsp Oil
  • 4-5 Cloves
  • 1 Black Cardamom
  • 1-2 Bay Leaves
  • Few Green Cardamoms
  • 1 small piece of Cinnamon
  • 1 tsp Cumin Seeds
  • 1/2cup chopped onions
  • 2 tsp chopped Garlic
  • 1 tsp chopped Ginger
  • 1 tbsp Ginger – Garlic paste
  • Water
  • ½ tsp turmeric Powder
  • 1 tsp Coriander Powder
  • 1 tsp red Chilli Powder
  • 1 tsp Garam Masala Powder
  • 1 cup Tomato Puree
  • 1 tbsp chopped Green Chillies
  • Salt to taste
  • Handful of Coriander Leaves
  • 1 tsp Kasuri Methi / dried Fenugreek Leaves
  • First, boil some eggs and then peel off the outer layer and prick the boiled egg with the help of a fork.
  • Now take a pan, put some oil and sauté the eggs till it is golden brown in colour. Take the eggs out of the pan. In the same pan, put the whole spices.
  • Now put onions, ginger, garlic and paste of Ginger-Garlic and mix everything well. Put some water and now add all the powdered spices. Stir for some time.
  •  Now put the tomato puree, salt green chillies and add some water for the gravy. Let it cook for some time.
  • Once the gravy is half – cooked, put the fried eggs into it. Combine everything well and cover the lid.  
  • Once it is cooked, put the coriander leaves and dried fenugreek leaves into it again, cover the lid. Let it cook for few minutes.
  • Your egg delicious egg curry is ready. Serve hot along with steam rice or roti. Enjoy!
