Yha ke adbudh itihas aur lajawab sanskritiyon ki kahaniyon ke bich mein apni rasoi ko mehkaunga chambal tel filtered groundnut oil mein bane udaipur special swadisht makai dhokla se. To aaiye aur mashgool ho jaiye swad aur sanskriti ke iss safar mein.

  • 2 cups maize flour
  • 1 cup curd
  • 2 green chillies, finely chopped
  • 1/2 inch piece of ginger, grated
  • 1/2 cup coriander leaves
  • 1 gm hing
  • 5 gms garlic
  • 40 gas spinach
  • 2 gms ajwain
  • 50 gms radish
  • 30 gms radish leaves
  • lemon juice
  • 1 tsp cumin seeds
  • 1 tsp black mustard seeds powder
  • 1 tsp red chilli powder
  • 1 tsp fennel seeds
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 & 1/2 tsp salt, or according to taste
  • 1/2 tsp papad khar or baking soda
  • 1.5 cups water
For the tempering:
  • 1 teaspoon black mustard seeds
  • 2 green chillies
  • 1 teaspoon cumin seeds
  • 1 teaspoon sesame seeds
  • 10-12 curry leaves
  • 3 tablespoon chambal filtered groundnut oil
Method:
  • Soak papad khar in water.
  • In a bowl, take makai ka atta, combine everything together properly.
  • Now knead the mixture into soft and smooth dough with lukewarm water.
  • Divide the dough into eight equal portions.
  • Portion it into balls and flatten them, and make a hole in the centre with your index finger
  • Add one glassful of water in an idli cooker / regular cooker and pre-heat.
  • Grease idli moulds (mention name & type of oil to be used for greasing) and keep shaped makai dhokla in it and steam dhoklas for 15 to 20 minutes. (if steaming in a regular cooker, remove the whistle) and keep the flame low.
  • After 15 minutes, check dhoklas with a fork and if it comes out clean, makai dhoklas are ready.
  • Transfer makai dhokla to the serving dish.
  • Heat chambal groundnut oil in a tadka pan. Add all the tadka ingredients. Immediately drizzle tempering on makai dhokla.
