Jaipuri Methi Mangodi

Rajasthan-Ro-Swad ka safar badh chala hai ek aur khubsurat sheher ki aur iss hafte, gulabi sheher jaipur ke adbudh itihas aur kisse kahaniyo ki jhalak se aapko milvaunga, aur sath hi, aapke muh mein paani aajaye aisi methi mangodi chambal tel mein banana sikhaenge. To aaiye iss swadish aur rajasthani shaan se bhare safar mein humara sath nibbhaiye!

  • 1 tsp mustard oil
  • 2 tsp ghee
  • 1 tsp jeera
  • 1 whole red chilly dry
  • 1 gm heeng
  • 1 tbsp ginger green chilly paste
  • red chilly powder
  • coriander powder
  • turmeric powder
  • salt to taste
  • 2 cups methi clean & chopped
  • 1/4 cup mangodi
  • 1/2 cup chopped tomato
  • 1 cup curd
  • 1 tsp amchoor powder
  • 1 tsp garam masala powder
  • 1 tsp kasoori methi
Method:
  • Heat oil and ghee in a kadahi and shallow fry mangodi till golden brown.
  • Take out the mangodi and soak it in warm water.
  • Iin the sam kadahi (check if there is any need of 'adding oil and heat'), add jeera when it crackles, add whole red chillies and heeng.
  • Add ginger and green chilly paste and cook for good 2 minutes on medium flame.
  • Add fenugreek leaves and cook for 5 minutes till it wilts.
  • Add salt and turmeric and cook for 2 minutes.
  • Add red chilly powder and coriander powder and cook 2 minutes further.
  • Add chopped tomato and mungodi and cook for good 10 minutes on slow flame till the tomato get dissolved.
  • Add whipped curd and cook on very low heat, stir continuously to ensure the curd doesn't split.
  • Bhuno it for 10 minutes till ghee oozes out.
  • Add kasoori methi and garam masala and amachoor powder.
  • Ready to serve.
