Mexican Rice

There are days when you feel like eating something new and fancy but want no-frills, this one pot rice meal recipe is perfect for such mood. Learn how to easily make restaurant style Mexican Rice at home. Next time when you don't feel like cooking then make this delicious and heathy rice loaded with sausages, veggies and rich flavor of Cajun spice.

  • short grain rice
  • chicken sausages & pork chorizo (optional)
  • 2 tbsp oilve oil
  • 2 tsp chopped gralic
  • 1 cup bacon
  • 1 diced onion
  • 1/2 cup diced yelllow pepper
  • 1/2 cup diced red pepper
  • 1/2 cup diced green pepper
  • 1/2 cup chopped black olives
  • 1/2 cup chopped green olives
  • 1 cup tomato puree
  • 3 - 4 tsp cajun spice
  • 250 gms short grain rice
  • water (1 1/2 cup water for 1 cup rice)
  • salt to taste
  • 3-4 tsp garlic flakes
  • 1 cup broccoli
  • cajun spice
  • 2 tsp deggi mirch powder
  • 2 tsp cumin powder
  • 2 tsp oregano
  • 2 tsp pepper powder
  • 2 tsp garlic powder
  • 2 tsp thyme
Method:
  • For cajun spice:
    • Grind deggi mirch powder, cumin powder, oregano, pepper powder, garlic powder, thyme, salt in a mixer grinder.

  • For mexican rice:
    • Heat olive oil in a saucepan or deep kadhai over medium high heat then add garlic. Once garlic starts cooking add bacon, sausages, onion, yellow pepper, red pepper, green pepper, black olives, green olives and nicely stir all together then tomato puree and mix it well with veggies and bacon.
    • Now add cajun spice followed by the short grain rice and mix all together, then add water and let the rice cook.while the rice cooking add salt and garlic flakes.
    • When rice is halfway cooked add broccoli to it.close the lid and let it cook for some time.
    • Serve hot mexican rice with some crispy nachos.
