Red Sauce Pasta

Pasta is one of the most popular Italian dish in India. The very name of the dish brings smile on the faces of many in our country. Chef Ajay Chopra brings the flavours of Italy to your kitchen with his very simple recipe of your favourite Red Sauce Pasta.

For the pasta sauce:
  • 1 tsp Normal Oil
  • 1 bowl chopped Onion
  • 1.5 tsp chopped Garlic
  • 2-3 tsp Tomato puree
  • Salt to taste
  • 1 tsp crushed Pepper
For pasta:
  • 1-2 tsp Extra Virgin Olive Oil
  • 1-2 tsp chopped Garlic
  • 1-2 tsp Chilli Flakes
  • 1-2 tsp Oregano
  • 1 tsp crushed Pepper
  • Handful of chopped Olives
  • 1 bowl chopped and boiled Broccoli
  • 1 bowl chopped and boiled Zucchini
  • Salt to taste
  • Handful Basil
  • 1 dollop Butter
  • 1 bowl Parmesan Cheese
For garnish:
  • Few fresh Basil leaves
  • Few fresh Basil leaves
  • 1 tsp Extra Virgin Olive Oil
  • 1 pinch of Pepper
Method:
  • Add salt in boiling water. Then blanch the tomatoes i.e. place the tomatoes in the boiling water keep it for 30 seconds, take them out and immediately put them in cold water. Boil the chopped broccoli and zucchini with the tomatoes and take it out in the same way. Add some oil to this water and boil the pasta in it.
  • For the pasta sauce, take the blanched tomatoes, remove their skin and chop them fine. Put some normal oil in a pan and add some onions and a little bit of garlic to it. Sauté the onions and garlic lightly and add the chopped tomatoes in it and cook it patiently. As it is cooking add some tomato puree to it and let it cook on one side. Add some salt and crushed pepper as per taste and the sauce is ready.
  • Take out the boiling pasta after 9-10 minutes. Drain off the excess water and mix in a little extra virgin olive oil and toss it, so that the pasta doesn’t stick together. Take a fresh cold pan and put some extra virgin olive oil in it. Then add garlic, chilli flakes and oregano. Sauté on a slow flame. Let it cook but the garlic should not go brown. Now add some crushed pepper for flavour. Then add some chopped olives and the boiled vegetables (broccoli and zucchini). Now add very little salt. Sauté a bit and then add the sauce to it. After this add basil and mix it well. Now add the boiled pasta in this and toss it nicely. After this add a dollop of butter and some parmesan cheese in it. Give it a toss and mix it very lightly so that a pasta doesn’t break. Your pasta is ready. Serve it in a dish and garnish it with some basil, olives, pepper and very little extra virgin olive oil.
