Chicken Lollipop

Chef Ajay is back with this very Chinese, very yummy and delightful snack ‘Chicken Lollipop.’ An easy recipe for this popular Chinese dish with a twist of Indian flavours. It’s truly amazing so try it out guys and let us know your experiences.

For the chicken:
  • 1/2 tsp. black pepper
  • 1 tsp. ginger-garlic paste
  • salt to taste
  • 1 tsp. vinegar
  • 1 tsp. soya sauce
  • 1 tsp. red chilli paste
  • 2 tsp. corn flour
  • 2 tsp. refined flour
  • 1 no. egg
  • oil
For the sauce:
  • 2-3 nos. dry red chilli
  • 1 tbsp. chopped garlic
  • 1 tbsp. finely chopped onions
  • 1 tbsp. red chilli paste
  • 1 tbsp. red chilli sauce
  • 1 tbsp. ketchup
  • salt and pepper to taste
  • 1/2 tsp. sugar
  • 1 tsp. vinegar
  • 1 tsp. soya sauce
  • the chicken lollipops
  • 2-3 nos. spring onion
  • handful chopped coriander leaves
  • handful ginger julienne
  • 1 tsp. diluted corn flour
Method:
  • Take fresh chicken lollipop in a bowl add to this 1/2 tsp. black pepper, 1 tsp. ginger-garlic paste, 1 tsp. salt, 1 tsp. vinegar, 1 tsp. soya sauce and 1 tsp. red chilli paste. Nicely coat this marinate over the lollipops and keep it for 15-20 minutes.
  • After 15-20 minutes add 2 tsp. corn flour, 2 tsp. refined white flour and 1 no. of egg to the marinated chicken and mix it nice and thoroughly. Now deep fry these lollipops in medium hot oil. You can coat the chicken with a light layer of dry flour before placing them in the oil if you want to make it extra crispy.
  • Now keep them aside, take a fresh pan to make the sauce. Heat the pan nicely. Chop 2-3 nos. dry red chillies and 2-3 nos. spring onions. Add oil to the extremely hot pan. In this goes the chopped red chillies and 1 tbsp. chopped garlic, lightly sauté. As the garlic starts getting brown add 1 tbsp. finely chopped onions and toss it up. Now add 1 tbsp. red chilli paste, 1 tbsp. red chilli sauce, 1 tbsp. ketchup and a dash of water and cook everything together. Add salt and pepper to taste. Then add ½ tsp. sugar, 1tsp. vinegar, 1 tsp dark soya sauce. Stir it up and bring it to a nice boil.
  • Take the crispy fried chicken in a plate. Add chopped bulbs of spring onions, handful of ginger julienne, freshly chopped coriander leaves and onion greens to the sauce. Nicely mix everything together.
  • Now nicely toss the fried chicken pieces in this sauce. Dilute 1 tsp. corn flour in very little water and add to the mixture. Mix it well and turn of the gas. Serve it hot with a garnish of onion greens on it and enjoy.
