Chef Ajay Chopra shows you a perfect way to have a spicy evening with a yummy snack. ‘Bhel Puri’ is not only famous in India but it’s popularity spreads to the world and today’s recipes of two different types of Bhel Puri – ‘Mumbai Bhel Puri’ and ‘Chinese Bhel’ will make your day. For Mumbai bhel puri:
  • puffed rice
  • 1 tbsp. chopped onions
  • handful chopped coriander leaves
  • 1/2 tsp. red chilli powder
  • 1/2 tsp. chaat masala
  • salt to taste
  • 2-3 nos. green chillies
  • 1 cup chopped tomatoes
  • 1 tbsp. mint chutney
  • 1 cup chopped boiled potatoes
  • 1 no. lemon
  • 4-5 nos. papadi
  • 1 tbsp. sev
For chinese bhel:
  • 1 no. spring onion
  • 1 cup chopped red and yellow capsicum
  • 1 bowl chopped cabbage
  • 1 bowl fries noodles
  • 1 tbsp. schezwan sauce
  • 1 tbsp. red chilli sauce
  • 1 tbsp. vinegar
  • chopped coriander
  • 2-3 nos. chopped green chillies
  • 1 tbsp. sliced onions
Method:
  • For mumbai bhel:
    Take half a bowl of puffed rice and add 1 tbsp. chopped onions to it. Finely chop handful fresh coriander leaves and add 1/2 tsp. red chilli powder, 1/2 tsp. chaat masala and salt to taste. Now finely chop 2-3 nos. of green chillies and add 1 cup chop tomatoes to this. With this add 1 tbsp. mint chutney and 1 cup chopped boiled potatoes to this. Squeeze 1 no. of lemon in this. Now stir everything up together. Crush 4-5 nos. crunchy ‘papadi’ into this and also add 1 tbsp. gram flour ‘sev’ to this. Toss it up together and serve it in a paper cone with a ‘papadi.’
  • For chinese bhel:
    Finely chop 1 no. of spring onion, add 1 cup of chopped red and yellow capsicum and 1 bowl of chopped cabbage to it. Now add 1 bowl of fried noodles, 1 tbsp. schezwan sauce, 1 tbsp. red chilli sauce, 1 tbsp. vinegar, 1 tbsp. chopped coriander and green chillies, 1 tbsp. chopped onions and mix it up together. Toss nicely. Garnish with a fresh sprig of coriander and serve it in a paper cone, plate or even a bowl.
