For the stuffing:
  • 2 tbsp mustard oil the stuffing
  • salt
  • 1 tbsp dry mango powder
  • 1 tbsp fennel seed powder
  • 1 tbsp turmeric powder
  • 1 tbsp red chilli powder
  • 2 tbsp coriander powder
For the tempering:
  • 2 tbsp mustard oil
  • 1 tbsp cumin seeds
  • 1 tbsp mustard seeds
  • 1 cup chopped onions
  • 1 tbsp ginger-garlic paste
  • 1/2 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1 tsp coriander powder
  • salt to taste
  • 1 cup tomatoes
  • 1/4 cup cashew nut powder
  • handful chopped coriander
Method:
  • We will heat up a cooking pot on one side and prepare the stuffing on the other. Take a bowl and mix 1 tbsp dry mango powder, 1 tbsp fennel seed powder, 1 tbsp turmeric powder, 1 tbsp red chilli powder, salt to taste, 2 tbsp coriander powder and 2 tbsp mustard oil in it.
  • Mix these together nicely. Take 2 tbsp mustard oil in the hot cooking pot, add 1 tbsp cumin seeds and mustard seeds to it. To this we'll now add 1 cup of chopped onions and saute. As the onions are getting brown fill the small sized eggplants/brinjals with masala stuffing we prepared. Add 1 tbsp ginger-garlic paste to the onions and saute them nicely.
  • Now to this we add 1/2 tsp turmeric powder, 1 tsp red chilli powder, 1 tsp coriander powder and salt to taste. Mix it together. Add 1 cup chopped tomatoes and cook everything together. A dash of water on the tempering and put the stuffed brinjals into it. Add some more water over it. The masala should coat the brinjals nicely. Cover it with a lid and let it cook for about 5-10 minutes. After this add 1/4 cup of cashew nut powder and handful chopped coriander over this and mix it nicely. Plate it nicely and serve it hot.
