Being a North Indian I am no different. I do have a range of parathas in my house, this is one paratha which I loved a lot. It is so tasty and so yummy. You can make this, cut into little triangles and give it to your kids, they will love it for sure.This is a great recipe to put in your kids lunch box. Since it is stuffed it will stay soft for a long time and I am sure your kids will love it for sure.
Making Paratha is equally easy. A little attention to details and you will be getting the softer and the yummiest parathas ever. The main part of any paratha is the dough. The dough needs to be a bit soft. The stuffing needs to be spread all around and one needs to roll it uniformly all around. If you follow these tricks, and a few tips mentioned below, each and every paratha of your will puff up and they would be soft and have the melt-in-the-mouth texture.
For stuffing, along with grated paneer for freshness mint, green chilies, fresh coriander, and ginger, add amchur powder for a nice tangy flavor and spices like some red chili powder, turmeric, ajwain, garam masala, roasted jeera powder not to forget to season the stuffing with salt, mix everything nicely
Make sure that there is no water in the paneer when you use it to prepare the stuffing. Ensure the dough is soft and pliable. And also both the dough and the stuffing should be in the right consistency. If anyone is too tight or watery, the parathas may not come out in shape.
Serve hot with dahi (plain yogurt/ curd) and pickle
1 cup paneer
1 tbsp chopped mint
1 tbsp chopped green chili
1 tbsp chopped coriander
1 tbsp chopped ginger
1 tbsp amchur powder
1 tsp red chili powder
1 tsp turmeric
1 tsp ajwain
1 tsp garam masala
1 tsp cumin seeds powder
Salt to taste
1 cup wheat flour
To taste salt
as required Water
- For dough
- In a bowl add some wheat flour, salt, and water and knead the dough and keep it aside
- For stuffing
- In a mixing bowl add some grated paneer, mint, green chilies, fresh coriander, ginger, amchur powder for a nice tangy flavor, some red chili powder, turmeric, ajwain, garam masala, roasted jeera powder, and salt, now mix all the masala nicely and your stuffing is ready.
- For paratha
- Take a small portion of the dough and make it into round balls and then flatten it and keep the edges thin, keeping the middle portion thick.
- Now add the stuffing of paneer in the flat dough with thin edges and then wrap it from the edges so that all the stuffing should be inside the paratha.
- Now make a nice ball shape and dust some flour on it and then roll out the dough into a nice flatbread just like roti or Indian bread.
- Then take a Tawa place it on the gas and as the Tawa heats place the paratha on it and let it cook.
- Once it is cooked from one side flip it to another side. Pour some oil or ghee to make it nice and crispy and then repeat this on the other side.
- Your paneer paratha is ready. Serve it while it’s hot along with a big spoon of butter. Enjoy!
