Bedmi Puri Aloo


Ingredients

1 cup soaked white urad

1 tbsp refined oil

1 tsp jeera

1/2 tsp hing

1 tsp chopped ginger

1 tsp green chillies chopped

1 tsp turmeric

1 tsp red chilli powder

1 tsp coriander powder

1/2 tsp garam masala

1 tsp salt

1 tsp amchur powder

1 tbsp chopped coriander

 

For The Dough

1/2 kg atta

1/2 cup suji

1 tsp ajwain

1/2 red chillie powder

1/2 tsp turmeric powder

1/2 tsp salt

4 tbsp ghee

oil for deep frying

ALOO SABZI

Ingredients

1 tbsp ghee

1 tsp jeera

1 tsp hing

1 tsp ginger

2 nos green chopped

1 tsp turmeric

1 tsp red chilie powder

11/2 tsp coriander powder

11/2 tbsp besan

1 tsp soaked methi seed

1 cup chopped tomatoes

1 cup boiled peeled potatoes

1 tbsp fresh chopped coriander

METHOD

1) Heat oil in the pan

2) Add jeera allow it to crackle

3) Add hing, chopped ginger, green chillies

4) Add turmeric powder, red chilli powder, coriander powder and garam masala powder and cook it at low flame.

5) Add soaked urad dal,salt and amchur

8) Cool the mixture for 5 mins and set aside

9) Grind the mixture into coarse texture.

10) Add chopped coriander in the mixture.

11) Take ½ kg atta and add suji to it

12) Add red chilli powder, turmeric powder, salt and add ghee.

13) Rub the flour nicely till it becomes crumbly.

14) Knead the tight dough using water as required.

 

For aloo sabzi

15) Apply oil to finish the dough.

16) Heat ghee separately in a pan.

17) Add jeera to crackle

18) Add hing

19) Add chopped ginger and green chillies

20) Add turmeric and red chilli powder.

21) Add coriander powder.

22) Add besan and roast for a while.

23) Add overnight soaked methi seeds

24) Add splash of water

25) Add one cup chopped tomatoes

26) Add water and stir it nicely and amchur powder and chopped coriander

27) Add crushed potato

28) Add fresh chopped coriander

29) Divide the dough in equal portions.

30) Make a cup using thumb and finger

31) Add stuffing and secure it nicely

32) Heat oil on a medium flame

33) Apply a little oil on the stuffed dough and roll it like a puri.

34) Deep fry the Puri until crisp and puffed.
