For Potli

5 Nos Bayleaf

1 Tsp Black Peppercorn

7 Nos Cloves

3 Nos Big Cardamom

3 Tbsp Tea Leaves

1 Tsp Coriander Seeds

2 Tsp Salt

Chola Masala

1 Tbsp Jeera

2 Tbsp Coriander Seeds

½ Tbsp Black Pepper

10 Nos Big Cardamom

7 Nos Cloves

1 Tsp Ajwain

4 Nos Bayleaf

3 Sticks Cinnamon

3 Nos Green Cardamom

 

1 Pinch Baking Soda

For Bhature

2 Cups Maida

½ Cup Sooji

½ Tsp Salt

1 Tsp Sugar

1 Pinch Baking Soda

1 Pinch Baking Powder

½ Cup Dahi

1 Tbsp Cooking Oil

 

Fried Aloo

1 Nos Boiled And Peeled Potato

1 Tbsp Oil For Cooking

1 Tsp Amchoor Powder

1 Tsp Mustard Powder

1 Tsp Saunf Jeera Powder

1 Tsp Anardana Powder

½ Tsp Garam Masala

1 Tsp Res Chiily Powder

½ Tsp Pudhina Powder

For Cooking.

4 Tbsp Chola Masala Prepared Above

1 Tbsp Amchoor Powder

1 Tbsp Kala Namak

1 Tbsp Red Chilly Kashmir Powder

1 Tsp Ginger Julienne

1 Tsp Green Chillies Julienne

1 Tsp Kasoori Methi

3 Tbsp Vanaspati Ghee

Instant Pickle

1 Cup Carrot

1 Cup Raddish

1 Cup Green Chillies

½ Cup Ginger

4 Tsp Mustard Oil

1 Tsp Yellow Musard Whole

½ Tsp Kalonji

½ Tsp Mustard Seeds Powder

½ Tsp Jeera Powder

½ Tsp Amchoor.Powder

1 Tsp Black Salt

1 Tsp Turmeric

1 Tsp Kashmiri Chillies

2 Tbsp Vingear

1 Tsp Salt

Method

Soak The Chana In Water Overnight

Next Day Boil It With The Potli Ingredients For 4 Whistles

Remove The Potli Roast And Grind The Chola  Masala

Once Whole Is Cooked, Remove The Potli, Drain And Reserve The Water Seperately

Tranfer The Chole In A Kadahi Add Ginger Julienne, Green Chillies Julienne, With All The Powder Masala

Mix It Well.

Heat Dalda In A Pan And Pour It Over The Chole And Close The Lid

After A While Add Reserved Water And Chole Is Ready

For Bhature

Take Maida In A Parat, Mix All The Dry Ingredients

And Knead The Dough With Yoghurt

If Required Add Water To Knead A Smooth And Pliable Dough Using Little Water.

Allow It To Rest.

Divide The Dough Into 8 Equal Portions And Roll The Dough Into Oblong Shape

Deep Fry The Bhatura In A Medium Hot Oil Till It Puffs Up

Drain It On A Kitchen Towel

For Masale Wale Aloo

Shallow Fry The Boiled And Quartered Potato In Oil

Drain The Excess Oil In A Seperate Bowl For Later Use

Mix All The Masala And Toss The Masala With Aloo.

The Masale Wale Aloo Is Ready

For Instant Achaar

Heat Mustard Oil In A Pan, Add Yellow Mustard Seeds And Allow It To Crackle

Reduce The Flame And Add All The Spices And Vinegar.

Add The Vegetables And Coat It Nicely

Serve Hot Bhatura With Chole, Masale Wale Aloo And Achaar.
