Hara Bhara Kabab

Let’s spice things up with a mouth watering starter. The hara-bhara kebab, from chef ajay right to your kitchen.

  • oil
  • ghee
  • cumin
  • 2-3 now chopped green chilli
  • 2-3 tsp chopped ginger
  • 1 no. chopped carrot
  • 1 bowl boiled mashed peas
  • 1 bowl boiled pureed spinach leaves
  • 1 tsp cumin powder
  • 1/2 tsp yellow chilli powder
  • 1/2 tsp garam masala
  • 1 small bowl boiled mashed potatoes
  • 2 tsp corn flourmix
  • handful dry fenugreek leaves powder

  • 4-5 chopped raisins
  • 1 pinch garam masala
  • salt to taste
  • 1 chopped green chilli
  • chopped ginger
  • chopped coriander leaves
  • 1 tsp lemon juice
Method:
  • Take some oil in a pan and add ghee to it. Now add some cumin to it. Add chopped green chilli. Now add chopped ginger to it. Then add chopped carrots and peas and roast them together. Before this boil the peas and make it into a paste, so that the flavours seeps inside.
  • Now add pureed spinach to it. We need to wash the spinach leaves, then boil or blanch them and puree them before adding. While we are roasting these together we will add some more ghee. Add 1 tsp roasted cumin powder, 1/2 tsp yellow chilli powder, 1/2 tsp garam masala powder. Stir it nicely. Roast it till all the moisture dries out. Then take it out in bowl and cool it down.
  • Now take some boiled, grated potatoes, do not grate hot potatoes. Now add salt to it. With that add 2 tsp corn flour. And handful of dry fenugreek leaves powder. Chop a few cashew nuts, raisins, and put them in a bowl. Add pinch of garam masala, some salt, and some chopped green chillies, some chopped ginger and a little freshly chopped coriander. Now add 1 tsp lemon juice.
  • Moist your hands with water. Now take the green mixture, flatten it and fill it with the stuffing and close it. If you want to deep fry it the mixture should be tighter. We will shallow fry this. We place a cashew nut over it. And make a number of kebab balls.
  • Put ghee in a pan for shallow frying the kebab. Add some oil in it too. Place these kebabs in the pan for shallow fry. Cook it from both sides. Now take these out with light hands. Plate it nicely and enjoy your hara-bhara kebab.
