South Indian Korma


Method

  • For kurma paste dry roast grated fresh coconut , cashews, roasted chana dal, coriander seed, fennel seeds, and cumin seeds and make it into a  fine paste.

  • Then heat coconut oil in a pan add curry leaves, cloves, green cardamom, peppercorn, star anise and let it crackle

  • Then add chopped, onion and saute till becoming a golden brown then add ginger garlic paste, and saute for a min.

  • Then add red chili powder, turmeric, salt, tomato puree, and bhuno for some time.

  • Then add curd, and kurma paste mix well, and cook for a few minutes.

  • Then add all the blanched vegetables cauliflower, potato, green peas, French beans, carrot, and a little water wait till boiled then add chopped coriander.

  • Garnish with chili oil and powder coconut and serve with Malabari paratha or rice.
