Kuttu Puri  Aloo Sabji


Ingredients

  • For Aloo Ki sabji
  • 1 tbsp Ghee
  • 1 tsp Cumin Seeds
  • 1 tsp Hing / Asafoetida
  • 1 tbsp chopped Ginger
  • 1 tbsp chopped Green Chilli
  • 1 tbsp Rajgira Atta
  • 1 tsp Turmeric Powder
  • 1 tsp Red Chilli Powder
  • 1 tsp Black Pepper Powder
  • 1 tsp Cumin Powder
  • 1 cup roughly chopped Tomatoes
  • 1 cup boiled diced Potatoes
  • Water as required
  • 1 tsp Amchur Powder
  • Sendha Salt as required
  • Handful chopped Coriander Leaves
  •  
  • For Kuttu Puri:
  • 1 cup Kuttu Ka Atta
  • 1/2cup Rajgira Atta
  • 1 cup boiled & mashed Potatoes
  • Sendha salt as required
  • 1 tsp Ajwain
  • 1 tsp Red Chilli Powder
  • Water as required
  • Oil for Frying
  • Ghee

Method

  • For Kuttu Puri:
  • First, in a bowl add some Kuttu ka atta, some rajgira atta if needed then some boiled and mashed potatoes some salt to taste, and ajwain and some red chili powder.
  • The aloo is added to the mixture because the rajgira atta or the kuttu ka atta does not have gluten in it and hence it might not bind well and hence potato is added to it to make a nice dough.
  • Now take a pan and add enough oil for deep frying and let it hot.
  • Now take some ghee and rub it in your palm and then take a small quantity of the dough and press it with the help of your palm to give it a nice and round flat shape of puris and add the puris in the hot oil and once it is fried, take it out from the oil and place it in a plate.
  • Your Kuttu ke puri is ready.
  • For the Aloo ki Sabji:
  • Take a pan and some ghee. And then add some cumin seeds once the ghee is heated add a good amount of hing some chopped ginger and green chilies and sauté everything together.
  • Then add some rajgira atta which will give a nice fragrance and thickness then add some turmeric powder some red chili powder, black pepper powder, and some cumin powder, and mix everything well.
  • Then add some medium-sized chopped tomato to the mixture and add some water and let it boil for some time and cover it with a lid.
  • Once the tomatoes are boiled and soft, add some salt, diced potatoes, amchur powder, and mix everything nicely.
  • Then add some finely chopped coriander leaves and let it boil for few more minutes.
  • Once the sabji is ready take it out on a serving plate and serve along with hot Kuttu puris and relish during your fast days. Enjoy!
