Introduction

 

It was a warm evening, and the air was filled with the soft scent of blooming roses. That is when I decided to cook Gulkand Phirni. The combination of floral notes and the smooth texture of rice created a symphony that I could not forget.

 

Gulkand Phirni Recipe 

 

Ingredients:

 

  • 1 liter Milk
  • 1 cup Semiya / Vermicelli
  • ½ cup Ghee / Clarified Butter
  • ½ cup chopped Mixed Dry Fruits (Cashew, Almond, Chironji, Pistachios)
  • 1 tsp Cardamom Powder
  • A small amount of soaked Kesar / Saffron
  • 1 tsp Kewra Water
  • ½ cup Sugar
  • 1 tbsp Kismis
  • ½ cup chopped Dates
  • Gulkand
  • Rose Syrup
  • Diced Green Apple (for garnish)
  • Pistachios (for garnish)

 

 

Method:

 

  1. Prepare Rice Paste:

    • Soak the rice for 2-3 hours and then grind it into a coarse paste.
  2. Boil Milk:

    • In a pan, add milk and allow it to boil.
    • Once boiling, stir it occasionally, then add condensed milk and the rice paste.
  3. Cook Milk and Rice Mixture:

    • Stir occasionally, keeping the heat on medium flame.
    • Continue stirring until the rice is cooked and the milk thickens.
  4. Add Sweeteners and Flavorings:

    • Add sugar and cardamom powder to the thickened milk and rice mixture.
    • Add soaked saffron, kewra water, gulkand, and rose syrup. Mix well and let it cool completely.
  5. Prepare Semolina Garnish:

    • Sauté semiya in ghee until golden brown. Sprinkle some sugar on it and keep it aside for garnishing.
  6. Assemble the Phirni:

    • Dice green apples and place them at the bottom of serving glasses.
    • Pour the phirni on top of the diced apples.
    • Garnish with more diced apples, pistachios, and the sautéed semolina.
  7. Serve:

    • Your Gulkand Phirni is ready to be enjoyed. Serve chilled and relish the delightful flavors.
