It was a hot summer day, and as I strolled past the vibrant food stalls, my senses were immediately captivated by the blend of spices and flavors emanating from the Dabeli carts. Intrigued by this aromatic symphony, I couldn't resist trying this iconic street food delicacy.

Ingredients:

 

For Dabeli Masala:

  • 1 Red chili
  • 1 tsp Coriander seeds
  • 2 Cinnamon sticks
  • 4-5 Cloves
  • ½ tsp Cumin seeds

For Dabeli Mixture:

  • 2 tbsp Peanut oil
  • ½ tsp Cumin seeds
  • Hing water, as per taste
  • 1 Chopped onion
  • 2 tbsp Dabeli masala (from above)
  • 4 tsp Tamarind chutney
  • Salt, as per taste
  • 2 Boiled potatoes
  • 2 tsp Chopped coriander
  • 1 tsp Masala peanut
  • 1 tsp Pomegranate seeds
  • 1 tsp Chopped coriander
  • 1 tsp Butter
  • ¼ cup Grated coconut

For Chutney:

  • 3 Soaked red chilies
  • 7-8 Garlic cloves
  • ½ tsp Lemon juice
  • Salt, as per taste

For Finishing:

  • 2 Pav (bread rolls)
  • 1 tsp Butter
  • 1 tsp Dabeli masala
  • ½ tsp Salt
  • 2 tsp Meethi chutney (tamarind date chutney)
  • 2 tsp Tikhi chutney (spicy chutney)
  • 2 tsp Masala peanut
  • 2 tsp Pomegranate seeds
  • 2 tsp Nylon sev (crispy chickpea flour noodles)

 

 

Method:

 

For Dabeli Masala:

  1. Roast red chili, coriander seeds, cinnamon sticks, cloves, and cumin seeds in a nonstick pan until fragrant.
  2. Grind the roasted spices into a fine powder.

For Dabeli Mixture:

  1. Heat peanut oil in a nonstick pan, add cumin seeds. Once they crackle, add hing water.
  2. Add chopped onion, dabeli masala, and tamarind chutney. Cook for a while.
  3. Add salt, boiled potatoes, and cook for another 1-2 minutes.
  4. Mix in chopped coriander, masala peanut, pomegranate seeds, and cook for 2-3 minutes.
  5. Add chutney, chopped coriander, butter, grated coconut, and cook for 2-3 more minutes. Set aside to cool.

For Chutney:

  1. Grind soaked red chilies and garlic cloves into a fine paste.
  2. Add lemon juice, salt, and mix well.

For Finishing:

  1. Slit the pavs in half and grill them on a nonstick pan with butter.
  2. Spread dabeli masala on both sides of each pav and sprinkle with salt. Turn off the flame.
  3. Spread meethi chutney on one side and tikhi chutney on the other side of each pav.
  4. Spread dabeli mixture on one side of the pav.
  5. Top with masala peanut, pomegranate seeds, nylon sev, and butter.
  6. Serve hot, garnished with more masala peanut, pomegranate seeds, nylon sev, chutney, and chopped coriander.
