170 grams dark chocolate

170 grams butter

170 grams flour

6 eggs

280 grams sugar

500 grams whipped cream

150 grams ganache

75 grams cherries

30 ml cherry liqueur

100 ml sugar syrup

50 grams chocolate flakes

Method:

In a double boiler, melt the dark chocolate and butter until they form a smooth and glossy mixture. Allow the mixture to cool slightly. In a separate bowl, beat the eggs and sugar until they become pale and frothy. Gently fold in the flour into the egg and sugar mixture. Now, add the melted chocolate and butter mixture to the egg and flour mixture, gently folding until all the ingredients are combined. Pour the batter into a prepared cake pan and bake it in a preheated oven until a toothpick inserted in the centre comes out clean. The chocolate sponge is now ready to form the base of our black forest cake.
