Veg Manchurian

Enjoy the very popular manchurian with this simple recipe brought to you by chef ajay chopra. Experience a lovely chinese twist in your kitchen.

For manchurian balls:
  • 1 cup finely chopped carrots and beans
  • 1 cup finely chopped cabbage
  • 1 tsp chopped ginger
  • 1 tsp chopped green chillies
  • 1 big pinch crushed pepper
  • salt to taste
  • 1 tsp soya sauce
  • 2 tsp white flour
  • 2 tsp corn flour
For manchurian gravy:
  • 2-3 nos. dry red chillies
  • 1 tsp chopped garlic
  • 1/2 cup chopped red and yellow peppers
  • 1 tsp chopped green chillies
  • 1 tsp crushed black pepper
  • 1 pinch red chilli powder
  • salt to taste
  • handful chopped coriander
  • 2 tsp soya sauce
  • 1 tsp vinegar
  • 1 tsp chopped ginger
  • 1 tsp red chilli paste
  • 2 tsp diluted corn flour
For dry manchurian:
  • 2-3 nos. dry red chillies
  • 1 tsp chopped garlic
  • 1/2 cup chopped red and yellow peppers
  • 1 tsp chopped green chillies
  • 1 tsp crushed black pepper
  • 1 pinch red chilli powder
  • salt to taste
  • handful chopped coriander
  • 2 tsp soya sauce
  • 2 tsp vinegar
  • 1 tsp chopped ginger
  • 1 tsp red chilli paste
  • 2 tsp diluted corn flour
Method:
  • For manchurian balls:
    Take 1 cup finely chopped carrots and beans in a big bowl. With this add 1 cup finely chopped cabbage and mix them together. Add chopped ginger and 1 tsp chopped green chillies. Add a pinch of crushed pepper and some salt. Add 1 tsp soya sauce, 2 tsp white flour and 2 tsp corn flour. Now nicely mix everything together. Now add very little water into it just to make a wet mixture with a binding but not very diluted. Make small round balls from this mixture and put them directly in the hot oil and deep fry.
  • For manchurian gravy:
    Now take some oil in a fresh hot pan. Add dry red chillies and 1 tsp chopped garlic to it and lightly. As soon as the garlic is roasting add some chopped red and yellow peppers. Then add water. Now add 1 tsp chopped green chillies, 1 tsp crushed black pepper, a pinch of red chilli powder, salt to taste, handful chopped coriander, 2 tsp dark soya sauce, 1 tsp vinegar and 1 tsp chopped ginger. Mix it up nicely and add the manchurian fried balls into this. Add 1 tsp of red chilli paste. Mix it well. Now add 2 tsp diluted corn flour to it and keep stirring. Some more chopped coriander for finishing and our gravy manchurian is ready. Plate it in a bowl and serve.
  • For dry manchurian:
    Similarly add dry red chillies and garlic. Sauté them. Add red and yellow peppers at the same time. Then goes 1 tsp red chilli paste and very little water. Toss everything together. Then add chopped ginger, handful chopped coriander, chopped green chillies, a pinch of black pepper, a pinch of red chilli powder and salt to taste. We need to add very little water just to make a sauce to soak the manchurian balls in. Now goes 2 tsp soya sauce, 2 tsp vinegar. Add the manchurian balls to this. Now add 2 tsp of diluted corn flour. Toss and stir well and the dry manchurian is also ready. Plate it and serve it hot.
