Dough 

 

Ingredients 

Wheat flour      3 cups

Salt                  1 tsp

Oil                    1 tbsp

Water               as required 

 

Method 

Take a plate, add wheat flour, salt, water and knead a tight dough.

Then apply some oil and knead it for a second and keep it aside for 10-15 mins.

Then divide it into small portions (approx. 90 grams per portion)

 

Pudina green chilli paratha

 

Ingredients  

Mint leaves chopped           1/4 cup

Coriander chopped              2 tbsp

Green chilli chopped            1 tbsp

Ajwain                                  ½  tsp

Black salt                             ½ tsp

Red chilli powder                  ½  tsp

 

Method 

Take a bowl, add mint leaves chopped, coriander chopped, green chilli chopped, ajwain, black salt, red chillies powder and mix them properly. Keep it aside.

Take one portion of a dough and roll it into a flat circle.

Apply ghee on it and spread mint masala across the roti.

Dust some flour on it and fold it into pleats. Now fold it into a circle and roll it into a flat roti.

Dust flour on a rolling surface, put the dough on it, apply some chopped coriander & mint leaves.

Press and roll it to flat roti. Do not apply too much pressure while rolling.

Heat a pan, and roast the parathas from both the sides. 

Apply ghee and remove it on a plate and serve hot.

 

Garlic paratha 

 

Ingredients 

Fried garlic                   ¼ cup

Black salt                      ½ tbsp

Green chilli chopped     1 tbsp

Chaat masala                ½ tsp

Red chilli powder          ½ tsp

 

Method 

Take a bowl, add chopped fried garlic, green chilli chopped, chaat masala, black salt, red chillies powder and mix them properly. Keep it aside.

Buknu Paratha 

 

Ingredients 

Coriander seeds         1 tbsp 

Black pepper               1 tsp 

Jeera                           ½ tsp

Ajwain                          ½ tsp

Black cardamom          2 pcs

Kasoori methi               1 tbsp

Hing                              ½ tsp

Dry ginger                     ½ tbsp

Chaat masala               ½ tbsp

Amchur                         ½ tsp

Black salt                      ½ tbsp

Red chilli powder          ½ tsp

 

Method 

Heat a pan, add coriander seeds, black pepper, jeera, ajwain, black cardamom, kasoori methi and lightly roast them.

Cool them and transfer it to a mixer jar, add hing, dry ginger powder, chaat masala, amchur powder, black salt, red chilli powder and blend it to fine powder.

Take one portion of a dough and roll it into a flat circle.

Apply ghee on it and spread buknu masala masala across the roti.

Dust some flour on it and fold it into pleats. Now fold it into a circle and roll it into a flat roti.

Dust flour on a rolling surface, put the dough on it, apply some chopped coriander & mint leaves.

Press and roll it to flat roti. Do not apply too much pressure while rolling.
