Author, Virginia Woolf once said, “One cannot think well, love well and sleep well if one has not dined well”. And this is a statement with which I agree entirely!

Indian cuisine is one of the most rapidly growing in the world and yet, there are very few international restaurants that serve truly authentic Indian food. So, when I was approached to collaborate with a popular chain of Indian restaurants in the UK, I jumped at the opportunity. When one thinks about the Indian food scene in the UK, London is one the few cities that has matured and really understood traditional Indian cuisine.

The foodie focus for my trip to the UK was on Glasgow, a national cultural hub and port city in Scotland’s Western Lowlands. I quickly noticed that the Indian food scene in here was quite antiquated in its culinary style of British-Indian cuisine. I also noted the great demand for Indian food in the city! And so, I sought to help change how Indian food was perceived in Glasgow by teaming up with a restaurant chain here.

Another delightful part of my trip was being invited as the Special Guest Speaker at University College Birmingham, England. Here, I had the chance to spend the day being taken around the university campus, learning how it works, visiting its culinary classes and even dining with the professors here. In fact, I’m currently in talks with the university regarding launching an Indian cuisine curriculum here as well.

While here, I also got the chance to visit Auchentoshan Distiller, one of Edinburgh’s oldest whiskey distilleries and the only one to conduct the Thrice Distillation Process. From being taken on a whiskey trail of Edinburgh to being shown the distillation and maturation process, this was a once-in-a-lifetime experience.

All in all, my week in the UK was a spectacular success, and one that I can’t wait to do again!
